Strawberries are definitely a fruit associated with summer, from daiquiris to salads to shortcakes, strawberries add a sweet twist to many summer favorites.
But have you ever considered adding strawberries to chicken?
The sweet taste matched with the tart flavor of limes can add a festive and flavorful kick to any dinner, making my strawberry-limeade chicken a must for summer evenings.
Ingredients
3 boneless, skinless chicken breasts
1 tbsp. olive oil
2 tbsp. lime juice
2 cloves garlic, minced
½ cup strawberry juice
¼ cup sliced strawberries
for chicken rub
1 tsp. brown sugar
1 tsp. basil
½ tsp. smoked paprika
½ tsp. crushed rosemary
Directions
In a small bowl, combine chicken rub ingredients and mix until thoroughly blended. Wash chicken, pat dry and apply rub on both sides. Place chicken in a resealable freezer bag and refrigerate for 1-2 hours.
Heat oil in a large skillet over medium heat. Add garlic and chicken and cook for five minutes.
Turn chicken over and spoon lime juice over each chicken breast. Cook for another five minutes
Turn again and spoon half the strawberry juice over chicken. Cook for another five minutes and repeat, using the other half of the strawberry juice. Add sliced strawberries to the skillet, turning occasionally.
Turn chicken once more and let cook five minutes or until a meat thermometer reads 170°.
Garnish with the cooked strawberries and serve with fresh strawberries and lime slices.
