Breakfast is the most important meal of the day, but sometimes, with the less-than-exciting choices we have, we tend to skip this meal altogether. Looking forward to lunch or dinner, meals that are a bit more exciting, breakfast seems to pale in comparison.
For those of you who skip breakfast or are looking for something to make your taste buds jump for joy, I have the perfect breakfast recipe to not only jump-start your morning, but make you look forward to that first meal of the day.
Pepperoni Pizza Omelet
Ingredients (per omelet)
- Deli sliced pepperoni (3 slices)
- 2-3 eggs
- 1 tbsp. Mama Francesca’s parmesan aromatico grated cheese
- ¼ cup shredded cheddar cheese
- pinch of parsley
Directions
- In a small bowl, beat eggs. Pour into a nonstick skillet, cooking over medium heat, and let eggs set.
- When eggs have set, sprinkle on grated cheese. Add 2-3 slices of pepperoni to one side of omelet, cover with shredded cheese and fold over. Let sit for one minute to allow cheese to melt. Garnish with parsley.
To further jump-start your morning, try a banana-cherry-berry smoothie. Bananas are known for their high source of potassium, which helps boost energy levels to make you feel more invigorated and ready to face the day ahead of you. Add berries to the mix and you have a treat worth savoring with any meal.
Banana-Cherry-Berry Smoothies
Ingredients (makes two servings)
- 2 medium bananas
- 1 cup fresh strawberries
- ¼ cup fresh raspberries
- ½ cup fresh blueberries
- ½ cup fresh black cherries
- ¼ cup fresh blackberries
- 1 tsp. vanilla extract
- 1 cup vanilla yogurt
- ½ cup orange juice
Directions
- Place all ingredients in a blender; cover and blend until smooth. Pour and enjoy.
Add a side of bacon or hash browns to your meal and you’ll have a breakfast fit for a king. Hello, just stumbled accross this site when I did a search for “pizza omlete”. I figured I couldn’t be the only person who’s ever thought of it :o). Anyway everything looks delicious including the smoothie. My question is, the fruit says ‘fresh’ for everything not frozen and there’s no ice, listed, so should I add ice or frozen fruit?
That depends on how thick you want the smoothie.
A half cup of ice can be added to help thicken the smoothie, and from there it is preference. Also, frozen fruit can replace fresh fruit, though I personally find fresh fruit to have a richer flavor.
